Fast determination of acrylamide in food
Application note covers the use of accelerated solvent extraction followed by ion chromatography with UV or MS detection to detect acrylamide in food samples
Dionex has published a new application note, 'Fast determination of acrylamide in food samples using accelerated solvent extraction followed by ion chromatography with UV or MS detection' The document, application note 409, describes the use of ASE for fast and efficient extraction of acrylamide from various food samples
The extracted samples are analysed directly using IC with UV or MS detection.
Although UV detection is sufficient for most of the analysed samples, MS detection offers higher specificity and sensitivity.
The required limits of determination of 50mg/kg acrylamide in food can be achieved with this application.
The method is robust, selective, and easy to perform.
