Nitrites in processed meat

Salt is used as a preservative in meat since it prevents the growth of some bacteria that are responsible for meat spoilage Years ago it was thought that certain salts should be used because they produced the pink colour and special flavour in cured meat

However, it has been determined that when nitrate changes to nitrite, by bacterial action during processing and storage, it is the nitrite that influences the colour and flavour.

Therefore, sodium nitrite is used today commercially in curing meat to help prevent the growth of bacteria and maintain the colour of meat.

The amount of sodium nitrite that can legally be used during the curing process is pre-determined.

The Orion 4-star pH/ISE benchtop meter and the Orion ionplus nitrites electrode can quickly and accurately determine the level of nitrite in any sample.

This meter offers a full complement of GLP-related features, can store up to ten methods and up to 200 datalog points with a time and date stamp.

The Orion 97-46 ionplus nitrite electrode offers additional benefits from its Sure-Flow combination reference design.

With this electrode a separate reference electrode is unnecessary, making it convenient to use with small sample volumes.
