Finding the veritas of a particular vino has a lot to do with finding its pH, and Sentron has the non-glass Isfet pH probes and meters to do just that
Several parameters influence the quality and the customers' perception of the wine, and many seem to be related to the pH of that wine.
Wine pH depends mainly on three factors: the total amount of acid, the ratio of malic acid to tartaric acid, and the amount of potassium present in the wine.
Wines that contain little acid and a lot of potassium have a high pH, while wine with more tartaric acid, less malic acid, less potassium and more titratable acid has a lower pH value.
The pH in its turn strongly influences wine properties such as taste, colour, oxidation and chemical stability.
At lower pH, both red- and white wines maintain a better colour intensity and white wine does not 'brown' as easily.
Moreover, bacteriological stability is also dependent on pH, as low pH inhibits bacteria, causes sugar fermentation to progress more evenly and makes malolactic fermentation easier to control.
At higher pH, bacteria grow rapidly and undesirable bacterial fermentation is more problematic.
As lower pH values are known to improve stability and deliver a better product, winemakers usually prefer a pH around 3.0-3.5.
In this range, the wine is so stable that many winemakers believe the pH is a crucial guideline in wine making.
For the very important measurement of pH in wine Sentron has non-glass Isfet pH probes and meters.
Special tip designs of the probes include a ConeFet model as well as a LanceFet model with stainless steel insertion tip, making this last probe suitable for measuring directly in the grapes before harvesting, at the grape level of processing and measuring in liquid.
These probes can be connected to the ergonomic Sentron pH meters, either the desktop Titan and Titan x or the portable Argus and Argus x meters that are especially designed for single-handed and simple, menu-driven operation.
The advanced -x models with their capacity to store up to 300 sets of sample data are the ideal choice for at-line use.
Standard features include simultaneous showing of pH and temperature on a clear and easy to read graphics LCD, automatic temperature compensation (ATC) using the temperature sensor built in into the probe, automatic buffer recognition for fast and simple calibration, automatic storage of calibration results for later consultation and complete diagnostic- and help-functions.
